Ingredients:
- 6lbs of chicken, boneless (Costco bag)
- 2 garlic cloves, minced
- 1 cup of Low-Sodium Chicken Broth
- 1 ½ tsp. of dried oregano
- ½ tsp of dried basil, dried thyme, and dried rosemary
- 1 ½ tsp. of lemon zest
- ¼ cup of fresh lemon juice
- 5 cups of packed spinach
Directions:
- Place all the chicken into the rice cooker, crock pot, or skillet.
- Then pour all the ingredients into the pan, and simmer for about 3 hours. (Start prepping other foods, or find something to do while it’s slow cooking!)
- You can use the chicken throughout the week for tacos, veggie + rice bowls, and mix it up
