• 6lbs of chicken, boneless (Costco bag)
  • 2 garlic cloves, minced
  • 1 cup of Low-Sodium Chicken Broth
  • 1 ½ tsp. of dried oregano
  • ½ tsp of dried basil, dried thyme, and dried rosemary
  • 1 ½ tsp. of lemon zest
  • ¼ cup of fresh lemon juice
  • 5 cups of packed spinach


  1. Place all the chicken into the rice cooker, crock pot, or skillet.
  2. Then pour all the ingredients into the pan, and simmer for about 3 hours. (Start prepping other foods, or find something to do while it’s slow cooking!)
  3. You can use the chicken throughout the week for tacos, veggie + rice bowls, and mix it up
